Ice Cream Filled Cupcakes

Ice Cream and cupcakes are the perfect combination.

If you love both desserts, than these Ice Cream Filled Cupcakes will be perfect for your entire family. All you need to do is pick out your favorite ice cream, along with the ingredients to make cupcakes and wallah!

Step 1: Make the cupcakes.
Step 2: Use a cupcake corer to hollow out the cupcakes.
Step 3: Fill them with ice cream.
Step 4: Frost them and freeze them.

To make the cupcakes, we used a box of cake mix from the grocery store.

Once they’ve cooled, we used a cupcake corer to remove the centers. Though not absolutely necessary, this makes the job quick, easy, and uniform. Simply press the corer into the top of the cupcake, twist, and pull. The core will remove in a perfect circle.

To fill the cupcake, simply scoop ice cream into the cupcake corer, insert into the cored cupcake, and press the plunger to insert the ice cream. If you’d like, you can replace the top of the core to cover the ice cream, but this isn’t totally necessary as the frosting will hide the hole.

Place the cupcakes in the freezer as you make the frosting. We used our buttercream frosting base, but you can also use a mix, or simply make your own from scratch.

Remove the cupcakes from the freezer and frost using a pastry bag and tip. Serve immediately, or cover and place back in the freezer until you’re ready to serve.

    These look FABULOUS! Do you recommend letting them thaw out at all before serving? Didn’t know how hard the frosting gets.

      You are absolutely right about the icing getting hard. So I usually let them thaw out a little before I eat them.
